Organic Red Kidney Beans from China Cover with plenty of cold water and leave overnight. If in a hurry, use boiling water and leave to stand for 2 hours. Boil vigorously for 10 minutes, drain and cook in fresh water for 1 hour or 20 minutes in a pressure cooker.
